Mountain bitter gourd drive a new concept of functional health from the combination of variety and processing
Mountain bitter gourd is one of the characteristic crops of the indigenous poeple. Because the fruit is small and harvesting is labor-intensive, even though it has functional potential, it is difficult to industrialize it. The HDARES has introduced the excellent characteristics and flavor of bitter gourd through breeding technology, enabling the industrial production of bitter gourd. Through cooperation with Tzu Chi University, the unique functions of bitter gourd were discovered and applied to the breeding program to stabilize its performance. In order to make the functional ingradients of bitter gourd more convenient for consumers to ingest, the fermented drink of bitter gourd was developed simultaneously to reconcile the flavor, so that the variety and processing of bitter gourd evolved simultaneously, benefiting the broad needs of the health care market.
